GUMBO RECIPE
During my senior year of high school, I used to leave after second period to hang out with my friends. They were mostly guys, but since I wasn’t putting out, they let me tag along to cook! I've loved being in the kitchen for as long as I can remember. If I love you, I’m bringing you food. Charlee and Carter can’t get enough of this dish—I hope you enjoy it too! 👩🏾🍳
INGREDIENTS
MEAT
(Proportions matter! Try to keeps veggies the same size as well as the meat w/ the exception of the crab)
- 1 lb chicken breast or thighs, cut into bite-sized pieces
- 1 lb turkey andouille sausage, sliced
- 1 lb shrimp, peeled and deveined
-1 lb crab , shelled
Vegetables
- 1 onion, diced
- 1 bell pepper , diced
- 2 celery stalks, diced (leaves included)
- 3 cloves garlic, minced
- 1 cup okra, sliced
Seasonings:
( I don’t actually measure these but I do mix all dry seasonings in a small bowl & season my gumbo a-little at a time until I’m happy)
2 tsp paprika
1 tsp dried oregano
1 tsp dried thyme
½ tsp cayenne pepper (adjust to taste)
½ tsp black pepper
1 tsb Gumbo File
Salt to taste
1 tsp smoked paprika (optional)
1 tsp Worcestershire sauce
1-2 bay leaves
THE Roux:
- ¾ cup olive oil
- ¾ cup all-purpose flour
Other Ingredients:
- 2 cups cooked jasmine rice
- 3 cups chicken broth
- 2 tbsp olive oil or butter
- 1 tsp hot sauce
- Green onions & fresh parsley for garnish
INSTRUCTIONS
1. Sauté the Sausage & Chicken:
- Heat 1 tbsp oil in a large pot or Dutch oven over medium heat.
- Brown the sausage, then remove and set aside.
- Add chicken to the same pot, season with salt , cook until browned. Remove and set aside.
2. Cook the Vegetables:
- In the same pot, add another tbsp of oil if needed.
- Sauté onions, bell peppers, garlic, and celery for 5 minutes until softened.
- Add more oil , fry okra at medium-high heat for 5mins to remove slime. Remove and set aside.
3.Make the Roux:
- Slowly whisk in the Olive oil then flour and stir continuously for 10-15 minutes over medium high heat until the roux turns a deep brown. (Milk Chocolate) Be careful not to burn it.
4.Simmer the Gumbo:
- Slowly pour in the stock while stirring to combine.
-Add chicken , turkey & veggies back into the pot
- Add seasonings and Worcestershire sauce.
- Bring to a boil, then reduce heat and let it simmer for (30-45 minutes) stirring occasionally.
5. Add Seafood & Finish:
- Add shrimp (or other seafood) and cook for about 5 minutes, until pink and opaque.
6. Garnish & Serve:
- Remove bay leaves.
- Serve over a scoop of rice
- Garnish with chopped green onions and fresh parsley.
- Serve hot with extra hot sauce on the side if desired.
I personally love cornbread with this meal!
